Have a food processor sitting unused, this recipe is easy and super for fiber.
Serves 2
1 large or 2 medium bunches celery, butt removed, tops trimmed.
1 16 oz. Mezzetta Roasted Bell Peppers (www.mezzeta.com.)
1 12 oz. Rice Vinegar, roasted garlic (www.huyfong.com)
1 tablespoon Chili Garlic Sauce (www.huyfong.com.)
Cut the celery into thirds and use food processor to reduce celery to slivers of celery, small, slender, but large enough to retain the celery taste. International House Dressing, in a mixing bowl, add rice vinegar, sugar and chili garlic sauce, mix well. Place celery into a non-reactive large bowl, cover with 1/2 cup International House Dressing and marinade for 20 minutes stirring every 10 minutes. Mix in roasted bell pepper and serve. WOW!
