Tomatoes on sale, try this one on for size
Cooking time: 45 minutes
2 Pounds Roma Tomatoes
1 small yellow onion, diced
¼ teaspoon paprika
2 tablespoons brown sugar
1 tablespoon butter
1 teaspoon curry powder or 1 teaspoon basil
¼ cup bread crumbs
In a 4-quart pot, heat water to boiling. Carefully spoon three or four tomatoes into the boiling water until tomato skin cracks. Remove from water and allow to cool, remove skin. Repeat until all tomatoes are skinless. Place in large mixing bowl. Add butter, onion paprika, curry or basil and cook on Medium heat until mixture reaches a sauce like consistency. Slowly add bread crumbs for desired texture. Serve in side dish. WOW!
