Buying a pre-cooked rotisserie chicken, dress it up with a diced tomato gravy.
Serves 2
1 rotisserie chicken, breasts removed from bone
2 tablespoons butter
2 tablespoons flour
1 14.5oz Vegetable broth
1 14.5oz diced Fire Roasted tomatoes (www.betterlivingbrandsLLC.com)
1 chicken bouillon cube
6 green onions for garnish
½ cup white wine or dry sherry
Melt the butter in a sauce pan, mix in flour, add vegetable bouillon, chicken bouillon cube and wine and bring to a low boil. Add diced tomatoes and leave on low boil for 10 minutes uncovered. Place chicken breasts on plate, ladle tomato gravy over breast and surround with green onions. WOWza!
