1-pound ground turkey
1 med yellow onion, peeled, cut in half and sliced
1 large zucchini, ends trimmed and sliced
4 tablespoons sesame seed oil
1 16 oz. Medium heat salsa (Mrs. Renfro’s Mango Habanero salsa
4 garlic cloves, peeled, crushed and chopped.
In a 10-inch frying pan, heat 2 tablespoons sesame seed oil until starts to smoke. Carefully add garlic and let fry until starts to brown. Add zucchini and onions and sauté until cooked, but slightly crunchy. Remove vegetables from pan into bowl lined with paper towels to absorb oil. Add 2 tablespoons sesame seed oil and heat, add turkey and cook thoroughly. Drain turkey of any juice, combine vegetables and salsa and bring to slow boil. Turn off heat and cover for 10 minutes to allow the salsa to flavor other ingredients. Serve and WOWZA!
