Serves 2
1 pound 85% lean hamburger
1 large zucchini, washed and sliced
1 large yellow squash, washed and sliced
1 large onion, halved and quartered
2 tablespoons black sesame seed oil
6 large garlic cloves, crushed and chopped
5 Serrano chilies, cut in half, de-seeded, chopped
¼ cup Chaka’s MMM Sauce (www.chakas.com)
In a 10-inch fry or sauté pan, heat the sesame seed oil and add garlic. Add hamburger and Serrano chilies and cook thoroughly. Raise handle and scoop meat towards handle, allowing to drain. While still holding the pan at an angle, remove hamburger from pan into a bowl lined with paper towel to absorb any excess grease. Lower pan allowing liquid to evenly cover pan bottom, add zucchini, squash and onions to pan and cook until crunchy, add Chaka’s sauce and hamburger and stir for 3 minutes. Cover and let simmer on low for 10 minutes, stirring every few minutes. Serve and Viola!
